Ingredients (serves 2)

  • 2 salmon fillets
  • 1 tablespoon olive oil
  • Salt and pepper, to taste
  • 2 cups mixed greens (spinach, kale, rocket)
  • 1 ripe avocado, sliced
  • 1/4 cup walnuts, chopped
  • 2 tablespoons mixed seeds (chia seeds, flaxseeds, pumpkin seeds)
  • Lemon wedges, for serving

  • 2 tablespoons tahini
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • 1 tablespoon water (or more as needed to reach desired consistency)
  • Salt and pepper, to taste

Method

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Place the salmon fillets on the prepared baking sheet. Drizzle olive oil over the salmon and season with salt and pepper. Bake the salmon in the preheated oven for 12-15 minutes, or until cooked through and flaky. While the salmon is baking, prepare the lemon tahini dressing. In a small bowl, whisk together tahini, fresh lemon juice, olive oil, minced garlic, water, salt, and pepper until smooth and creamy. Adjust the consistency with additional water if needed. Divide the mixed greens evenly between two serving bowls. Top each bowl with sliced avocado, chopped walnuts, and mixed seeds.
